Instructions:

Clean and chop the root vegetables. Heat the oil in a casserole, sear the ox cheeks on all sides, remove. Brown the root vegetables, extinguish with wine and stock, bring to a boil, season with salt and pepper and add the ox cheeks repeatedly. Close casserole and simmer at lowest temperature (liquid should only just bubble flat) until tender, which may take between two and a half and 4 hours dyauern. Replace too much evaporated liquid with more red wine. Approx.

half an hour before the end of the cooking time, add a little thyme. When the cheeks are tender, take them out, add a little butter to the sauce and serve with the cheeks. Suggested side dishes: mashed potatoes and glazed carrots.
