Instructions:

For the raw food mini pizzas with arugula, first grind the buckwheat and flax seeds in a stand mixer and put them in an extra bowl.

Grind the almonds and add half to the bowl. Put the rest aside in an extra bowl. Then cut the zucchini into chunks and blend until liquid. Add to the dry ingredients in the bowl.

Add the herbs de Provence for the dough and mix and knead everything together. Divide the dough into pieces of equal weight and roll out very thinly using the remaining ground almonds.

Dry in a dehydrator for 3-6 hours. After 3 hours, keep checking if they are already dry and take them out one by one if needed.

For the tomato sauce, soak dried tomatoes for one hour, pour away the soaking water and puree with 150g of the fresh tomatoes, the finely chopped bell bell pepper and the dates.

Spread pizza sauce on the pizza and sprinkle herbs de Provence. Top with arugula, tomato pieces, hemp seeds and sprouts or as desired and serve immediately.
