Instructions:

For the tomato chutney, halve the tomatoes, remove the seeds and cut into strips.

Peel the garlic and cut into slices. Peel the ginger and chop finely.

Fry garlic in oil until light golden, add sugar and caramelize. Extinguish with vinegar, add tomatoes and remaining ingredients.

Simmer the paradeis chutney uncovered over medium heat for about 25 min until most of the liquid has evaporated.

Pour the hot tomato chutney into jars and close tightly.
