Instructions:

Cut pineapple into slices, peel and dice half of the pineapple rings, chop the other half in a hand mixer.

Stir fruit mixture with gelling powder, juice and zest of lime and ginger powder (or finely diced ginger). Sweeten with liquid sweetener.

Let everything steep for about 20-half hours. Slowly bring to a boil while stirring. Make 1 1/2 min bubbling and fold in soaked and repeatedly squeezed gelatin.

Pour fruit mixture hot into prepared jars. Sprinkle preserving aid on top. Close the jars with lids.
