Perhaps your new favorite bean dish:

Soak beans in water for one night. A day later, make the beans in water for 1 to 2 hours. Make long grain rice in 400 ml salted water over medium heat until liquid is absorbed.

Heat oil in a frying pan. Sauté diced onion, pressed garlic and chopped chili pepper with the cumin seeds in it. Drain the beans and hominy, fold in and simmer on low heat for 2 to 3 minutes.

Add to the finished long-grain rice form. Cook tortillas according to package directions.

On each tortilla a little bit of rice mixture form. Divide cheese, sliced scallions and yogurt evenly among tortillas. Top each with 1 tsp salsa and bring to table.
