Instructions:

Season the meat with salt. Heat 2 tbsp. oil in a frying pan, sear meat in it over medium heat on all sides, remove from frying pan and cool.

Peel and halve the onions and cut them into strips. Mix red wine and port with spices and sugar and boil to half. Remove the spices, add the onions and simmer on low heat for 5 minutes. Remove onions from the stove and cool. Preheat oven to 200 degrees.

Chop toast bread in a shredder. Mix breadcrumbs and yolks loosely with the onion ragout, quantity 5 min. pull.

4. soak pork net well in cold water, squeeze out, spread on a kitchen towel and dry. Spread onion mixture on net, cover meat with quantity as well as pork net.

5. place the roast on a baking sheet covered with parchment paper and roast in the oven for about 12 minutes.

Anise pumpkin: 4 servings, preparation about 20 min.

Cut pumpkin into cubes and sauté briefly with star anise in butter and oil. Add salt, water and let it boil. Cover vegetables, remove from heat and let stand for a few minutes.
