(*) Makes about 8 to 10 dorati of about 15 cm ø.

Whisk flour and salt. Stir the milk and water with the eggs and add to the flour form. Stir until smooth and leave to swell in the refrigerator for about half an hour with the lid closed.

Add butter and mix the whole thing well.

Heat a little oil in a non-stick frying pan. Pour as much batter until the bottom is thinly coated with it. While adding batter, move the frying pan in a circular motion. Reduce the temperature. Turn dorati to the other side only when one side is sufficiently baked, i.e. when it comes off by itself. Bake the second side, transfer dorati to a plate and keep warm with the lid closed in the oven heated to about 50 °C.
