For the potato roulade, peel the cooked potatoes and press them through a potato ricer. Knead with egg yolk, flour, starch flour, salt and nutmeg to a dough.

Form a roll from the potato dough. Brush an aluminum foil well with liquid butter and carefully place the roulade on it. Close the ends well.

Cook the roulade for about 35 minutes. Remove from the water and remove the aluminum foil. Cut the potato roulade into slices.
