Instructions:

Mix flour with milk briskly and add sugar, salt, cocoa powder, eggs and egg yolks. Add the melted butter and mix to a smooth dough.

For the filling, peel the papayas, cut them in half lengthwise and scrape out the seeds. Cut half of the papayas into 1 cm cubes and set aside for the time being, finely puree the remaining papayas.

For the papaya filling, caramelize the sugar, pour in the orange and lime juice and simmer. Once the sugar has dissolved, add honey and whipped cream and let it reduce. Then add the papaya puree and the papaya cubes and bring to the boil briefly.

Heat a little clarified butter in a pancake pan and fry the pancakes in it.

Spread the papaya filling on the finished pancakes and roll them up.

Arrange on plates, garnish with cocoa powder and some papaya cubes and serve.
