PREPARATION Peel the pineapple, cut out the eyes, remove the woody stalk and cut the flesh into 1 cm cubes. PREPARATION Cut the duck breast crosswise into thin strips. Peel garlic clove and ginger and cut both into fine sticks. Halve the bell pepper, remove the seeds and cut the flesh into 1 cm pieces. Cut peeled shallots into wedges. Dust the duck breast strips with a little cornstarch. Heat nut oil in wok until very hot, stir-fry duck breast strips for about 1 minute and remove. Briefly stir-fry garlic, ginger, shallots, pineapple and bell bell pepper pieces together. Stir the fried meat slices back in. Mix together the soy sauce, chili sauce and about 3 tablespoons of water and pour into the wok. Simmer everything together for 1 minute more. Arrange ginger duck on warmed plates and serve with rice.
