Instructions:

Grease a round or oval gratin dish (25 or 27 cm long) with light butter. Remove peel from apple, cut into quarters, remove core. Cut apple slices into small pieces. Separate eggs. Mix cornstarch, egg yolks, curd cheese, vanilla bean pulp and 2 tbsp. maple syrup. Whip egg whites with sugar until stiff and fold into curd. Pour half of it into the gratin dish. Spread apple slices and frozen strawberries evenly on top. Drizzle with the remaining maple syrup and top with the remaining curd mixture. Bake the give on the low broiler with microwave and hot air at 595 and 525 watts plus 180 °C for 20 min, at 455 watts plus 180 °C for 22 min. Cover the casserole with aluminum foil at the end of the baking time and rest in the microwave for another 5 min.

Use blackberries.
