For the Easter Stain, first pour rum over the raisins and let them steep. Crumble the yeast between your fingers and mix with the lukewarm milk, a pinch of salt and sugar. Sprinkle with a little flour and let rise until cracks appear.

Then mix with yolks, remaining flour, vanilla sugar as well as grated lemon peel to a smooth yeast dough and beat well. Place in a bowl, cover with a cloth and let rise in a warm place until the volume has increased significantly. Add raisins, knead again and let rise once more.

Grease a round tart pan well with melted butter and sprinkle with flour.

Roll out dough to the size of the pie pan into a round patch. Place in the mold and let rise again. In the meantime, preheat oven to approx. 170 °C.

Brush the Easter cake with beaten egg white, sprinkle with almond slivers and bake until golden brown.
