In a saucepan, melt the butter and lightly fry the pieces of tongue in it. Add the garlic and extinguish with the water. Season with cumin, coriander, paprika, cayenne bell pepper and salt.

Make one to one and a half hours until the pieces of tongue are soft. Add vinegar at the end.

Cook the sauce. Bring the beef tongue to the table hot.

Use two chopped onions instead of the four cloves of garlic.
