Prepare currants and raisins. The best way to clean currants is to rub them between your hands in a little wheat flour. In this way, the small stalks are effortlessly removed. Wash currants in lukewarm water until it stops becoming cloudy, and pour them onto a colander to drain. Raisins and other raisins must be freed from the adhering stems, paying exactly the same attention to stone fragments that are often found underneath. After “picking”, rinse them thoroughly and pour them onto a colander to drain.
