Pasta dishes are always a good idea!

Sift flour into a large enough bowl, make a well. Pour in the juice of one lemon, eggs, salt and water. Knead everything together to form a dough. Cool in plastic wrap for half an hour.

Roll out the dough, cut several pieces to the size of the gratin dish. Cook them individually in boiling salted water for about 4 minutes. Next, drain on a kitchen towel.

Rinse parsley, dill, tomatoes, chop herbs, cut tomatoes into slices. Drain the olives and cut them into fine leaves.

Melt butter, mix with milk. Mix crumbled feta cheese with chopped herbs and paprika powder. Preheat the oven to 175 °C. Grease the gratin dish.

Place a pastry base in the dish, brush with the butter-milk mixture. Spread feta cheese, tomatoes and olives evenly on top. Place other pastry bottoms on top, proceeding as with the first. Finish with a pastry base. Brush with remaining butter-milk mixture. Prick dough a few times with a fork. Bake for 35 min., serve hot.
