Instructions:

For roe dee, first melt the chocolate in a water bath and then let cool slightly. Separate the eggs.

Beat the egg whites until stiff. Cream butter with sugar until thick and gradually mix in cooled chocolate. Stir in egg yolks, one at a time, until thoroughly combined. Mix in almonds and sponge cake crumbs. Finally, gently fold the beaten egg whites into the batter.

Preheat the oven to 180 °C. Grease a loaf pan with butter. Pour the cake batter into the pan, place it in the hot oven and bake for about 50-60 minutes.

In the meantime, melt the chocolate coating according to the package instructions.

Allow the baked cake to cool briefly in the pan, then turn out onto a baking rack.

Cover cooled saddle of venison with chocolate coating and sprinkle with almond slivers.
