Separate the eggs. Beat egg whites with a pinch of salt until firm.

Beat the sugar, vanilla sugar and butter until fluffy, then add the egg yolks one at a time and beat until fluffy as well.

Sift flour with baking powder and cornstarch and gradually stir into the wafer cream alternately with the milk.

Finally, quickly fold in the firm beaten egg whites.

Heat the waffle iron to medium heat. Brush with oil, and using a ladle, drop the batter onto the center of the hot iron. Close the waffle iron and bake the bubble waffle until golden brown. The time for this varies depending on the waffle iron – please refer to the instruction manual.

Using a wooden skewer, remove the waffles from the waffle iron and cool on a baking rack.

Bubble Waffles can be filled however you like.

If you want to serve Bubble Waffles rolled up, then put the still warm waffle into a waffle stanitzel or a nice mug and let it cool down in it. Then fill as you like.
