Gelation test: Place 1 small plate in the refrigerator. Put a drop of the preserves on this cold plate and hold it at an angle. If the drop remains solid, the jelly can be skimmed and poured in place. Skimming is best done with a large spoon. Jelly foam can be used as a yogurt additive or spread.

Mix apple juice with sugar and juice of one lemon and boil until jelly proof.

Add basil leaves. Boil again for 2 min. Make a jelly test! Empty into hot rinsed jars.

Rinse the jar lids with rum. Close the jars on the spot. Cool upside down.

Suggested dessert: vanilla ice cream with basil jelly.
