Instructions:

For the mini eclairs, beat butter and powdered sugar in a bowl until fluffy. Add vanilla essence to taste. Mix flour and salt and sift into the bowl, then mix everything with a wooden spoon to a soft dough.

Put the dough into a piping bag with a hole nozzle (diameter approx. 1 cm), pipe 6 cm long strips onto a prepared baking sheet and bake at 180 °C for 20 to 25 minutes until golden. (The cookies should be lightly browned).

Let the baked cookies cool on a cooling rack. Beat the butter and powdered sugar until fluffy, add the vanilla essence and vanilla flummery and mix well.

Using a piping bag, pipe the cream onto half of the cookies, place the other half on top and press down lightly. Melt the chocolate glaze and dip the eclairs briefly on both sides, drain and allow to cool.
