Pear Aperitif

For the pear aperitif, bring sugar to a boil in a little water, stirring constantly. Dissolve the sugar. Allow to cool and pour into cocktail glasses filled with ice cubes together with compote pears, compote juice, soda water and Williams brandy. Top with sparkling wine.
