For the broccoli casserole with paradeis sauce, first peel and finely chop the onion. Heat a little oil and sweat the onion in it. Deglaze with balsamic vinegar and add sugar. Deglaze with the strained tomatoes and season with salt and pepper. Let simmer so that the sauce thickens a little.

Grease a baking dish and sprinkle with breadcrumbs. Preheat the oven to 180 °C. If possible, heat a water bath as well.

In the meantime, blanch the broccoli in boiling water. Puree half of the broccoli with eggs, crème fraîche, nutmeg, salt and pepper. Stir in the remaining broccoli. Pour into the casserole dish and sprinkle with cheese.

Bake the casserole in a water bath for about 25 minutes.
