Perhaps your new favorite bean dish:

Rinse and clean the beans. Pre-cook in boiling hot salted water for eight minutes, drain, rinse until just cool and drain well.

In the meantime, chop the white part of the spring onions and cut nice green stem parts diagonally into narrow rings.

Heat the oil in a wide frying pan. Sauté the green onions, garlic and ginger in it for three to four minutes, turning. Add the curry paste and sauté until it smells good. Add the beans and the coconut milk. Continue uncovered until the beans are soft and the coconut milk has reduced slightly.

As the last step of the cooking time, stir in the chili peppers and parsley and season the bean curry with salt as well as a tiny bit of curry paste or powder, if desired.
