Mix dry oat flakes, flour, sugar and salt. Add the ground fennel, curd and buttermilk. Crumble in the yeast and knead the dough for 10 min.

Cover the dough and let it rise. Once the dough has risen a little, fold it repeatedly. Repeat this process a few times (helps the dough to rise).

Butter and flour a loaf pan. Pour in the bread dough, cut in and coat with water. Sprinkle bread with oatmeal and fennel, let dough rise repeatedly for a short time.

Preheat oven to highest setting, then bake bread at 200 °C for 45-60 min. For steam development 300 ml of water in a bowl in the stove form. The stove can also be additionally sprinkled with water. During the last 10 min, brush the bread twice with water.
