For the shrimp soup, wash the spinach, spin dry and coarsely chop. Clean the mushrooms. Peel and finely dice the onions and garlic. Heat the oil in a large pot.

Sauté onions, mushrooms and garlic in it. Add spinach and sauté for 1-2 minutes, stirring constantly. Season with herbs, salt and pepper. Pour in the soup and coconut milk.

Let the soup simmer for 20 minutes. In the meantime, rinse the shrimp under running water, pat dry and simmer in the soup until pink.

Season the shrimp soup again with salt, pepper and lime juice and serve.
