For the mango noodle salad, cook the noodles al dente, drain and rinse with cold water. Dice the peeled mango, spring onions, a few radicchio leaves and the bacon.

Sauté everything in olive oil, season with salt and pepper and mix with the pasta.

Decorate the mango pasta salad with basil leaves and serve.
