Instructions:

Rinse the potatoes and cut lengthwise into quarters or eighths, depending on their size.

Heat the olive oil (1) in a large frying pan. Add the potatoes, season with salt and roast for twenty minutes with the lid closed, turning occasionally.

Sprinkle the cod fillets with the juice of one lemon, season lightly with salt and season with enough pepper.

Roughly chop the white part of the young onion, cut the beautiful tubes into rings.

Add the tomatoes to the potatoes after twenty minutes of frying. Sprinkle with salt, pepper and fennel seeds. Roast in the open frying pan for another eight to ten min.

In the meantime, roast the cod fillets in the second unit of olive oil (2) for about two minutes on each side. Remove and keep warm on a plate.

In the drippings, sauté the garlic and green onion until light yellow. Add the thyme. Pour this mixture over the fried fish.

Serve the tomatoes and potatoes separately.
