Tip: Ox meat tastes good only when you cook a right piece of it. Besides, there must be enough fat on the meat. As is known, flavors are fat-soluble, without fat the meat tastes dry and meaningless. Sweet and sour plums, sweet and sour pumpkins and horseradish sauce also go well with ox meat.

If it is served without horseradish sauce, cream potatoes taste very good with it.

Bring salted water with vegetables and bones to a boil in a large saucepan. When the water begins to bubble gently, pour in the rinsed meat. This way, the hot water will close the pores on the spot and the juices won’t leak out. Simmer the meat gently on low heat for 1 to 2 hours.

Take it out and let it rest for a few minutes. Cut into slices and arrange on a platter. Pour a little of the clear soup over the meat. Arrange the vegetables on the plate as you like.

For the noodle soup: Cook vermicelli in salted water. When they still have a little bit of bite, drain them and put them into the soup tureen form. Pour the hot beef soup through a hair strainer. Season with salt, pepper and freshly grated muscatel. Remove the marrow from the marrow bones and add it. Sprinkle some finely chopped chives on top. If the noodle soup is to be the main course, place the meat with the vegetables in cold water (the pores do not close, the meat gives its strength to the clear soup). A
