Instructions:

For Zürcher Geschnetzeltes with herb spaetzle, cut pork into approx. 3 cm pieces.

Heat oil in a pan, add meat, season and fry briefly.

Put meat aside. Heat roast residue and butter, fry onion and mushrooms if desired, extinguish with white wine if necessary and pour on cream and water.

Season sauce with salt, pepper, herbs and any spices. Add meat again and let it steam for about a quarter of an hour.

For the spaetzle, put flour in a bowl. Add seasoning, oil, eggs, water, chop fresh herbs and mix the dough a little.

Put salted water on to boil, sift spaetzle into it. When the spaetzle rise to the edge of the pot, they are ready.

Arrange Zürcher Geschnetzeltes with herb spaetzle, garnish with parsley and serve.
