Pour hot water over tomatoes, after a few minutes peel and chop coarsely. Then put all the ingredients (except the trout) in a frying pan, season with salt, season with pepper, heat and simmer on low heat with the lid closed for 20 min. Add the trout, season it if necessary, and let it simmer in the sauce for about 7 minutes, turning the fish to the other side after about 3 minutes. Then place the trout in a shallow oval dish and pour the sauce over it. Once cooled, keep covered with foil in the refrigerator until you want to serve the trout.
