Preheat the oven to 50 °C. Cut peeled onions into rings. Quarter apples, remove core and cut into slices. Score the chops along the bone and the fat edge a few times. Heat lard in a frying pan, fry chops for four minutes on each side, season with salt, season with pepper and sprinkle with a little marjoram. Keep the chops warm on a plate in the oven with the lid closed. Fry the onion rings in the remaining fat until golden. Add apple slices and cook for about five minutes until soft. Then extinguish with apple brandy. Season with salt, pepper and marjoram, add chopped parsley and spread the apple mixture evenly over the chops.

Serve with mashed potatoes, tomato salad and apple cider.
