Dice the potatoes. Cook with salt, water, bay leaf, new spice and shallots. Mix buttermilk and flour together.
When the potatoes are cooked, pour off a little liquid and remove the spices. Add the buttermilk to the potatoes, stirring continuously, season with salt, pepper and sugar, and add a dash of whipped cream.
Tip: fry bacon and onions and add.
