A great pasta dish for any occasion:
Pre and make: approx.35 minute.
Preheat kitchen stove to 60 degrees, plate and plate.
Heat clarified butter in a frying pan until hot. Roast meat in batches over medium heat for 1 min, season, keep warm, dab up any drippings left over with kitchen roll.
Heat butter in the same frying pan, sauté shallots and mushrooms for about 3 min. Add soup, bring to a boil, reduce heat, simmer liquid to half, add meat repeatedly.
Add crème fraîche and all ingredients up to and including parsley, season, just until hot, serve.

Tips Instead of ostrich steaks, use ostrich fillets.
Cut the meat from the butcher.
