Instructions:

1. chill salmon fillet well, maybe put it in the freezer for about 1/2 hour. This makes it easier to cut into narrow slices.

For the sauce, rinse and dry the herbs. Peel garlic. Cut both into small pieces. Add olive oil, beat everything together for 3 seconds with a chopper or possibly a blender. Season to taste with salt and freshly ground pepper.

Remove the skin from the tomatoes. Cut flesh into cubes. Rinse potatoes, remove peel and cut into cubes of about 1 cm. Cook in boiling salted water for 4-5 minutes, drain, rinse with cold water.

Drain. Fry in 3 tablespoons hot olive oil until golden brown all over, season with salt.

Cut salmon fillet into 1/2 cm thick slices. Sauté in the remaining hot oil for 1/2 minute on each side, season. Drizzle a few drops of lemon juice over the top. Serve with the green sauce, diced tomatoes and roasted potato cubes.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – they also stand out for their fresh taste!
