Heat the milk, butter, salt and sugar while stirring until the butter has melted. Crumble the yeast into the cooled, lukewarm mixture and stir to dissolve. Cover and let rise for about 10 min. Add milk mixture to flour form and knead into a smooth dough. Knead dough for about 10 min until no longer sticky.

Cover and let rise in a warm place for 1 hour.

Divide the dough into 12 pieces and press a hole in the dough with your finger. Circle with your finger until the hole is about 3 cm ø. Preheat the oven to 200 °C, let bagels rise for 10 min with the lid closed.

Add bicarbonate of soda to 1.5 liters of boiling water and cook bagels in bicarbonate of soda water in batches, lift out with a skimmer, drain and place on a baking sheet lined with parchment paper. Mix egg with a tiny bit of water and brush on bagels. Sprinkle with salt or grains, if desired.

Bake the rings on the middle rack for about 15-20 min until golden brown.

Place hard boiled eggs inside the finished bagels.
