For the mulled wine corners, preheat the oven to 180º C hot air.

Separate the eggs. Beat sugar, vanilla sugar, egg yolks and butter until very fluffy. Beat the egg whites with a pinch of salt until stiff.

Sift the flour with the baking powder and fold in. Add the mulled wine (save 6 tablespoons for the glaze) and finally mix in the beaten egg whites.

Spread smoothly on a baking tray lined with baking paper.Poke holes in the mixture at regular intervals with a wooden spoon handle. Pipe the chopped chocolate into these holes. Bake for about 25 minutes.

In the meantime, prepare the mulled wine glaze. To do this, gradually stir the powdered sugar into the warmed mulled wine.

Spread the mulled wine glaze on the cooled cake mixture and sprinkle with chocolate shavings. Allow to set slightly and cut into corners.
