For the chia banana pancakes, mix the banana pieces with eggs and chia and mash well with a potato masher. Mix in some cinnamon and the almonds.

Lightly heat some coconut oil in a coated pan. Pour the batter in batches into the hot fat and swirl the pan until you have a thin pancake.

When one side is golden brown, then carefully flip and allow to brown nicely. Repeat the process three times.

Drizzle the chia banana pancakes with maple syrup and serve.
