For the fig mustard, puree the figs with the red wine or balsamic with a hand blender, stir in the jelling sugar and let the juice steep for about 30 minutes. Then boil for 4 minutes while stirring until bubbly.

Stir in the mustard and bring to the boil again briefly. Immediately pour into clean jars and seal. The fig mustard is a nice gift for friends.
