For Mediterranean potatoes, preheat the oven to 200 °C top and bottom heat. Cut potatoes (peeled or unpeeled) into small cubes and place in a baking dish.

Pit olives and chop them with herbs. Cut fresh and dried tomatoes into cubes.

Mix all the ingredients with mustard and capers in the mold, add a tablespoon of olive oil, season with salt and pepper and mix everything well.

Finally, press the peeled garlic cloves into the mixture (so they don’t burn on the surface).

Put the casserole dish in the oven and bake for about 45 minutes, until the potatoes are cooked.
