For the lentil curry, dice the onion, dice the carrots and bell bell pepper, and finely chop the cilantro. Heat the oil and fry the vegetables all around.

Add lentils, vegetable soup and coconut milk and simmer on low heat for about 20 minutes until lentils are soft.

Season with ginger, turmeric, curry powder and salt and refine the lentil curry with coriander.
