Select 500 g of ripe sloes (preferably harvested after the first frost), rinse briefly and drain well on a dish rack, then spread out and dry for another day. Fill a wide-necked jar with 125 g of rock candy, spread evenly and add 1 bottle of gin (0.7 liters). Seal jar and let stand at room temperature for six weeks until candy is completely dissolved. On top shake heartily and filter. Bottle and steep approximately repeated six weeks.

The sloe gin looks blue-red at the beginning and becomes more brownish over time. The quality does not suffer from the color change.

Sloes are the fruits of the prickly hawthorn bushes, which often form hedges between fields. The fruits are spherical, blue-black and, like plums, have a bluish tinge. The flesh is tart and only becomes more temperate with a little frost. In some years the bushes are full of berries, in others you can hardly find any. But in any case, you have to look for sloes yourself, because you can not buy them. Speaking of which, if the sloes are ripe but haven’t had a frost yet, you can help them along: You place the sloes spread out on a tray in the freezer for a few hours. Process further when thawed.
