In the hot butter, sweat the flour until light brown, extinguish with the liquid while stirring continuously with the whisk and let it bubble up. Spike the onion with the cloves and bay leaf spice and add to the sauce form. Simmer on the lowest heat for about 15 minutes.

Remove the onion. Season the sauce with salt and freshly grated muscatel.
