Instructions:

1. preheat the oven to 200 °C. Place the ham on a baking tray and roast in the heated oven for about an hour. Remove from the oven, cut the pork rind into small pieces and set aside.

Mix egg yolks with sugar and mustard and spread on the ham. Sprinkle with breadcrumbs.

Place the ham on the pork rind and cook in a heated oven at 225° Celsius for about 10 minutes until golden brown. Allow to cool and cut into small slices.

Stew the plums in a little tap water for about 10 minutes. Separate apples from peel, stone, cut into slices and fry in butter. Serve both with ham on a platter. Serve with boiled savoy cabbage, boiled potatoes and bacon.
