Vendace is a whitefish species, related to the Bavarian whitefish. Vendace can be found in the Arendsee in Saxony-Anhalt.

Marinate fresh fish briefly in juice of one lemon and season with freshly ground white pepper and iodized salt. Turn in flour and breadcrumbs to the other side. Melt 50g butter in a frying pan over medium heat and carefully roast the fish on both sides for about 7 min total. After 5 min of roasting, extinguish with a splash of white wine. Remove the fish from the roasting pan and keep warm. Use the white wine to dissolve the roasting juices, pour off through a hair sieve, add sour cream or crème fraiche and cook until reduced by half. In a second frying pan melt another 100g of butter, pour in the almond flakes, color, remove from the stove and keep warm. Beat the reduced sauce with small pieces of the remaining butter. Garnish the fish with the sauce and the almond flakes.

Serve with: Remove peel from potatoes, cut into boat shapes, steam until tender. Serve with chopped parsley.
