Instructions:

Cut the smoked meat into very fine cubes or chop finely with a food processor. Drain the capers and chop finely.

Wash the lime hot, grate the peel and then squeeze the lime. Finely grate the horseradish. Cut the apple into small pieces or grate finely.

Mix all the ingredients together. Mix in a few tsp of the lime juice and 1 tsp of the zest. Mix in the thyme leaves. Set aside some of the meat and for garnish.

Mix the mixture well with the cream cheese and season with salt and pepper. If the spread is too firm, you can stir in some more plain yogurt to make it nice and creamy.

Pour the finished mixture into a bowl. Sprinkle with the meat and pepper. Garnish with thin slices of apple.

You can prepare the smoked meat spread the day before. It is best served with wholemeal bread.
