A delicious mushroom dish for any occasion!

Rinse the shrimp, remove the shell, cut in half and remove the casings. Remove the peel from the garlic and shallots. Rinse peppers and remove stem ends. Roast garlic, shallots and peppers under broiler, then finely pound in mortar. Cut lemongrass into 5 cm pieces and pound tenderly flat. Clean ginger and galangal and pound in mortar. Rinse, dry and coarsely crush the lemon leaves. Heat half of the coconut milk over medium heat. Stir in peppers, shallots, garlic, ginger and galangal. Fold in Nam Prik fish sauce, sugar, phau, grained juice of one lemon, paprika, clear soup, ~grass and leaves, make 5 min. Clean the mushrooms, cut them in half and add them together with the remaining coconut milk. Let it boil for 1 minute. Add the shrimps and cook for 2 minutes. Rinse and dry the coriander sprigs, pluck the leaves and sprinkle on top. Time of preparation: 30 min. Time of preparation: 15 min.
