Mix flour and cornmeal in a baking bowl. Press a bulge in the center. Add beaten eggs, salt and milk. Beat batter until smooth.

Heat 1 tbsp oil in frying pan for each pancake. Bake 8 small pancakes from the batter. Keep warm.

For the filling, remove the skin from the onions. Peel tomatoes and cut out stalks. Finely dice both. Cut peppers in half, clean, remove seeds and rinse. Cut flesh evenly into cubes. Heat oil. Add vegetables. Season with salt and cayenne pepper. Cook for 15 minutes. Season well with paprika and Tabasco sauce. Cut chicken into small cubes. Pit olives and cut into quarters. Add to the vegetables with the chicken. Add washed raisins and simmer for 10 minutes. The liquid must boil away. Spread the filling evenly on the pancakes. Roll up and bring to the table.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
