Instructions:

For the stirred polenta with spiced bacon, first prepare the spice stock.

For the spice stock, briefly fry the onion in olive oil. Add all other ingredients for the spice stock, simmer gently for 5 minutes and strain through a sieve.

Then stir in the polenta and simmer for about 30 minutes, stirring frequently. Season if necessary, add 100 ml of whipped cream and 1 tablespoon of Parmesan cheese.

For the spiced bacon, fry the spiced bacon in very little oil until crispy.

Serve the warm polenta with spiced bacon and garnish with chard or spinach leaves drizzled with olive oil.
