One Pot Pasta with Mushrooms and Vegetables

Instructions:

For the One Pot Pasta, soak dried mushrooms in about 200 ml of water for about 30 minutes, or slice the fresh mushrooms. Dice tomatoes and eggplant, finely chop garlic.

Slice leek and wash thoroughly. Remove seeds from chili pepper and chop finely. Gently fry pine nuts in dry pot until brown all over and remove from pot immediately.

Add spaghetti, mushrooms, tomatoes, eggplant, leeks, cream cheese, chili, lemon zest and juice, garlic, salt and pepper to the pot, fill with vegetable soup, cover and bring to a boil.

After about 6 minutes, remove the lid and continue cooking, stirring frequently, until the liquid has almost completely boiled away and the spaghetti is still firm to the bite (about 15 minutes total).

Finally, stir in the Parmesan and serve the One Pot Pasta sprinkled with the pine nuts and fresh herbs.
