Peel the potatoes, rinse, cut in half, boil in salted water, cook for about 20 minutes, drain, steam and press hot through the potato press, put aside to cool.

Beat butter (1) until smooth and gradually add egg yolks, mashed potatoes, cheese (1), salt and nutmeg.

Whip the egg whites until stiff, fold them in and pour the mixture into a greased ovenproof dish sprinkled with breadcrumbs, filling it no more than 3/4 full.

Sprinkle with cheese (2), put butter (2) in flakes on top and put the mold on the broiler in the preheated oven. Bake at 200-225 degrees for about 1 hour.
