For the chocolate mousse, dissolve couverture in hot milk. Add gelatine leaves soaked in water to the chocolate milk, let cool.

Whip egg whites and sugar not too firm, whip cream, fold everything into the cooled chocolate. Chill for 3-4 hours, serve with raspberry sauce or caramelized orange wedges.
